Ingredients:

  • Zucchini – 1 kg;
  • Onion – 2 pcs;
  • Sour cream 20% – 200 g;
  • Cream 20% – 100 ml;
  • Water – 1 liter;
  • Flour – 1.5 tbsp;
  • Paprika – 1 tsp;
  • Vegetable oil – 15 ml;
  • Butter – 15 g;
  • Salt – 1 tsp.

Ingredients for croutons:

  • Bread – 100 g;
  • Vegetable oil – 20 ml;
  • Paprika – ½ tsp;
  • Herbes de Provence – ½ tsp;
  • Salt – ½ tsp;
  • Garlic – 2 cloves.

Preparation of zucchini soup:

1. Finely chop the onion, and in a pot, melt the butter with the vegetable oil. Sauté the onion over medium-high heat until it becomes transparent.

2. Meanwhile, grate the zucchini on a coarse grater; young fruits can be used with their skins and seeds. Add the flour and paprika to the onion, mixing well.

3. Pour water into the pot, reducing the heat to medium. Add the zucchini to the soup, stir, and let it cook.

4. For the croutons, cut the bread into cubes, mix it with vegetable oil, paprika, herbes de Provence, and salt. Spread the future croutons on a baking sheet, flatten them, and bake at 150 degrees for 10-15 minutes.

5. Skim off any foam from the surface of the soup, add sour cream and cream, and season with salt. Cook the soup for a few more minutes.
