- Cottage cheese (preferably in a block) – 360 g
- Egg – 1 piece
- Rice flour – 30 g
- Sweetener – to taste

Prepare the base. In a deep bowl, thoroughly mash the cottage cheese with a fork or blend it for a smoother consistency. Add the egg, sweetener, and most of the rice flour (about 20 g). Mix well – the mixture should be dense and not stick to your hands.

Form the cheese pancakes. Roll small balls from the prepared dough, then slightly flatten them to achieve the classic shape. Coat each pancake in the remaining flour – this will give them a light crispy crust.

Fry until golden brown. Heat a skillet over medium heat, add a little oil, or cook on a dry non-stick surface.
Fry the pancakes covered for 2-3 minutes on each side until a delicious golden crust forms.

Use medium moisture cottage cheese – too dry will make them dense, while too wet will make them mushy.
