Let’s take a closer look at how the prices of vegetables in the "borscht set" changed at the beginning of February 2025.

How Have Prices Changed?
February brought various trends in vegetable pricing. The most significant increase was seen in young cabbage, which rose from 75.23 to 97.15 UAH per kilogram. Regular white cabbage also became more expensive, albeit to a lesser extent, increasing from 45.83 to 50.87 UAH per kilogram.
Potato prices exhibited mixed dynamics. While regular potatoes decreased in price from 34.57 to 31.65 UAH per kilogram, young potatoes saw a slight increase, rising from 34.17 to 34.40 UAH.
Onion prices also varied. White onions almost maintained their price, standing at 86.75 UAH compared to 86.03 UAH in January. Yellow onions saw a slight decrease, dropping from 16.75 to 15.75 UAH per kilogram, while red onions experienced an increase, rising from 34.02 to 31.90 UAH.
Beets, a crucial ingredient in borscht, also experienced a price increase, with costs rising from 22.95 to 24.70 UAH per kilogram.

The prices of vegetables remain volatile, making it especially important for those who cook regularly at home to keep an eye on them. Despite the rising costs of certain products, borscht remains an affordable and beloved dish among Ukrainians.
